Pork soup with yoghurt

Yoghurt

Ingredients 4 servings

  • 800 g pork meat
  • 1 carrot
  • 1 parsnips
  • 1 parsley’s root
  • 1 small celery
  • 1 onions
  • 2 eggs
  • 50 g rice
  • 250 g yoghurt Covalact de Ţară
  • Green parsley
  • tarragon
  • vinegar
  • salt
  • pepper

Preparation method

1. Prepare the pork meat: clean it, then cut it in pieces and boil it in salted water. Remove the foam and add the fine chopped onions with big chunks of vegetables. Boil for 30 minutes then add already boiled rice and boil for another 5 minutes.
2. Separately, mix the yokes with the Covalact De Tara yoghurt and thin with soup, then poor onto the meat. Add the chopped tarragon.
3. Add salt and vinegar and boil again twice.
Serve hot, with green parsley on top.

Good to know:
For the aspect of the soup the meat can be removed from the bones and to add the vegetables. Yoghurt can be improved with one half of sour cream Covalact de Tara 15% fat.
