1. Mix the ingredients and prepare homogeneous and elastic dough. Leave it to grow 30 minutes or so. Separately, cover the raisins with rum and leave them to macerate.
2. Mix in a bowl and the fresh cow cheese, eggs, grated lemon peel, raisins drained of rum.
3. Extend the dough in one slim sheet and cut 12 cm long squares, place on each square a tea spoon of cheese and fold the ends. Place the pies on a tray on special baking paper and leave them for 20 de minutes somewhere warm. Then cover them in butter and bake them for 45 minutes, at medium temperature.
